These slightly sweet fries are a great alternative to potatoes, and they boast beta carotene, alpha carotene, and vitamin C, giving a boost to the immune system and protecting eyes from harmful UV rays. (Fries with benefits? Sounds good to us!) If you're new to working with butternut squash, it's very dense, so cut it (carefuly!) with a large, sharp knife.

  • 1 butternut squash, peeled (if desired) and cut into fry-like pieces
  • Sea salt

  1. Preheat oven to 425 degrees. Spray a cookie sheet with cooking spray.
  2. Place squash on the prepared sheet and sprinkle lightly with sea salt. Bake for 40 minutes, flipping halfway through. Fries are done when they are starting to brown on the edges and get crispy.
  3. Serve with ketchup or other dipping sauce.
